Gender
Most people prefer female lobsters as their tales a generally wider than the males. This give you more meat as the majority of edible meat is in this area. If you're not sure how to tell the difference, look for the "swimmerets", which are found under the tail. The first pair for females is soft, whereas in males this is hard.

Color
Lobsters come in a range of colors including: green, blue, red, yellow and white. When a lobster is cooked it will always turn red (except for white lobsters). The colour generally has little affect on the taste.

Age
Unfortunately, there is no precise way to measure the age of a red lobster. It is generally based on the size, which gets larger over time. The speed of growth can vary depending on where they lobster is found - cold or warm waters. Age is very important when choosing a lobster because older ones tend to contain tougher flesh, whereas younger specimens are tender.

Shell
Red lobsters go through a molting process where they shed their shell. Normally a lobster's shell is quite hard, but after this molting process they have a relatively soft shell. Softer shells are easier to cook and break, however when purchasing lobsters online most people choose the hard shell option as they're less likely to break during shipment.
